You can grow real food in pots on a patio, balcony, or step - here's how to pick the pot, what to fill it with, what to grow, and the one habit that decides whether it lives.
A container garden is the lowest-commitment way to grow food. A few pots on a patio, a balcony, a front step, or a rented yard you can't dig up will grow herbs, salad, peppers, and more, and you can move them to chase the sun or dodge a late frost. If you're still weighing pots against a bed in the ground, the garden types guide compares them. Pick a bigger pot than you think you need
Almost every beginner's container is too small. A bigger pot holds more soil, and more soil is a bigger water reservoir and more root room - both of which make the pot far more forgiving. Rough floors that work: a large leafy herb or a pepper wants at least a 20–25 cm8–10 inch pot; a tomato or anything that sprawls wants a 40 cm15 inch pot or a five-gallon bucket. The only non-negotiable is a drainage hole - a pot without one drowns roots in the first heavy watering. Material matters at the margins: plastic and glazed ceramic hold moisture longer than unglazed terracotta, which wicks water out through its sides and dries fastest of all.
The one demand a pot makes: water
This is the rule that actually kills container plants, and it's the reason all the pot-size advice above matters:

NOT CITED, AND RECORDED SO IT IS NOT RE-SOUGHT: a web search attributed the drying-rate claim to UMD Extension's 'Maintaining Container Grown Vegetables'. The page was opened and it makes NO comparison between containers and ground and offers NO mechanism - it says only that frequency 'will vary based on the plant type, the size of the plant, and size of the container'. This is the second misattributed quote in this arc (the first was a UC IPM page that did not contain the root-growth sentence credited to it). A quote is not a source until the page has been opened.

A pot's whole root zone sits above ground in a small, fixed volume of soil, cut off from the moisture of the earth below. It empties fast. In high summer a small pot in the wind can need water more than once a day. So the habit that keeps a container garden alive is simple: check it every day, twice when it's hot - push a finger into the soil, and water when the top feels dry. The engine will not hand you a watering schedule, because how much depends on the weather, the pot, and the day; what it tells you is to look, more often than you'd look at the ground.
Fill it with potting mix, not garden soil
Reach for a bag of potting mix, not a shovel of soil from the yard. Garden soil packs down hard in the closed space of a pot, holds too much water, and drains poorly - the opposite of what roots in a container need. Potting mixes are built light and open so they hold moisture but still drain. Because a pot is a closed system and frequent watering washes nutrients out the bottom, container plants also need feeding more regularly than the same plant in open ground - follow the rate on whatever fertilizer you use. (For a plant in the ground the honest first step is a soil test; a bag of potting mix has no such history to read, so a balanced feed at the label rate is the standard.)
Don't bother with gravel in the bottom
A common instruction is to put a layer of gravel or broken pot shards in the bottom "for drainage." The honest status of that advice is: it doesn't do what it's sold to do, in either direction.

The old "never put gravel in the bottom of a pot" rule turns out to be overstated — a recent controlled test found a coarse bottom layer usually helps drainage a little or does nothing, not that it hurts. It's also no cure: a good potting mix and a real drainage hole matter far more. Layer or don't; just don't count on it to fix a soggy mix.
what is actually known
This one is genuinely unsettled, and the popular "it's a myth, gravel makes drainage worse" answer overstates the case. The theory behind that answer is the perched water table: water is held in the fine mix by capillarity and does not cross freely into a coarse layer, so a gravel bottom was predicted to push the saturated zone up into the root ball. But a 2025 controlled experiment on real containers found the opposite of the prediction — a coarse bottom layer almost always reduced or did not change water retention, and essentially never increased it, with a coarse-sand layer draining best. So a drainage layer does not reliably harm drainage and may modestly help. It is also not the fix it is sometimes sold as: a well-drained potting mix and an open drainage hole matter far more than anything layered at the bottom.

PLoS ONE (2025), 'Effect of drainage layers on water retention of potting media in containers' (read 2026-07-14 via PMC PMC11856292): 'Drainage layers were almost universally found to either decrease or have no effect on the water-holding capacity of containers'; 'any drainage layer was likely to reduce water retention of any medium, and almost never increased it' — a controlled result that contradicts the perched-water-table prediction that a coarse bottom layer worsens drainage. Grade demoted F -> D 2026-07-14 on this evidence.
The thing that actually governs drainage is the mix and the hole, not a layer at the bottom. Fill the whole pot with good mix, make sure the hole is open, and skip the gravel - or add it if you like, just don't count on it to rescue a soggy pot.
What grows well in a pot
Favor the compact and the fast over the sprawling and the huge. Reliable in containers: leaf lettuce and other salad greens, most herbs, bush beans, radishes, chard, and peppers - a pepper is the classic patio crop, productive in a modest pot. Determinate ("bush") or dwarf cultivars of tomato and squash are bred for exactly this and beat their full-size cousins in a pot. The sprawlers - full-size indeterminate tomatoes, winter squash, sweet corn - can be done, but only in the biggest containers, and corn in particular needs a block to pollinate that a few pots can't give it.
